A breakfast casserole with a blend of spinach, eggs, sausage, cheese and tomato juice.
Tomato Egg Breakfast Casserole
- 1/2 lb . sausage I like Jimmy Deans, chopped
- 1/2 C . chopped onion
- 3 oz . fresh baby spinach
- 6 large eggs
- 1/2 C . tomato jucie
- 2 T . all purpose flour
- 1/4 tsp . mustard powder
- 1/4 tsp . salt
- 1/4 tsp . pepper
- 1 C . shredded aged white cheddar or regular sharp cheddar
- 1/2 C . shredded swiss cheese
Brown the sausage in a skillet, remove and drain off all but 1 T. of the grease.
Add in the onion and spinach and cook until the spinach has wilted.
Remove from the heat and set aside.
In a mixing bowl whisk together the eggs, tomato juice, flour and seasonings.
Stir in the spinach/onion mixture, the sausage and the cheeses.
Combine well and pour into a lightly greased 9x9 pan. Bake in a 350 degree oven for 30 minutes.
