Homemade fried corn fritters just like my Mama use to make. Eat just like they are or drizzle with syrup for a delicious treat.
Homemade Corn Fritters
- 3/4 cup yellow cornmeal
- 3/4 cup all purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoons baking soda
- 1 1/2 teaspoons sugar
- 1/2 teaspoon salt
- 3/4 cup buttermilk
- 2 eggs whipped
- oil for frying
Heat oil in a large dutch oven over medium/high heat.
In a bowl, combine the cornmeal, flour, baking powder, baking soda, sugar and salt. Whisk to evenly combined.
In a small bowl, whisk together the buttermilk and eggs.
Add to the dry ingredients and stir until just coming together but a few flour streaks remain.
Once the oil is hot, use a 1/4 cup measuring cup to drop the batter into the hot oil.
Fry to a golden brown.
Transfer to a paper towel lined plate and then into a basket or bowl.
