Country Fried Steak Dinner
  • 1 lb. thin chicken strips (cut to size desired)
  • 2 eggs
  • 2 cups flour
  • ½ cup butter
  • ½ cup cooking oil
  • salt and pepper to taste
  • 2 cups frozen broccoli
  • 1 cup Velveeta cheese (diced) with ¼ cup milk
  • 6 medium potatoes
  • ½ cup milk
  • ½ cup butter
  • salt and pepper to taste
  • ¼ cup flour
  • 2 cups milk
  • remaining oil from frying chicken
  • salt and pepper to taste
  1. Beat 2 eggs in a bowl
  2. On a large plate put about 2 cups flour
  3. Coat chicken strips in the eggs and then the flour
  4. Place oil in frying pan and heat
  5. Put the butter in the pan
  6. Add chicken to pan
  7. Salt and pepper to taste
  8. Fry chicken until a golden brown.
  9. Cover and turn down heat to low and cook for about 20 minutes longer.
  1. Peal potatoes and dice into small cubes
  2. Place in water and boil for around 15 minutes or until tender
  3. Remove from heat and drain water
  4. Add milk
  5. Lightly salt and pepper to taste
  6. Beat with mixer until smooth
  1. Place 2 cups frozen Broccoli in a bowl and place in microwave on defrost for around 10 minutes or until tender.
  2. In separate bowl put cheese cubes into microwave for about 3 minutes or until melted. Add the milk and stir until blended.
  3. Lightly salt and pepper to taste
  4. Pour over broccoli when serving.
  1. Remove chicken from frying pan
  2. Add ¼ cup flour and stir until smooth
  3. Add the milk and stir until consistency desired
  4. Lightly salt and pepper to taste
