Country Fried Steak Dinner
- 1 lb. thin chicken strips (cut to size desired)
- 2 eggs
- 2 cups flour
- ½ cup butter
- ½ cup cooking oil
- salt and pepper to taste
- 2 cups frozen broccoli
- 1 cup Velveeta cheese (diced) with ¼ cup milk
- 6 medium potatoes
- ½ cup milk
- ½ cup butter
- salt and pepper to taste
- ¼ cup flour
- 2 cups milk
- remaining oil from frying chicken
- salt and pepper to taste
- Beat 2 eggs in a bowl
- On a large plate put about 2 cups flour
- Coat chicken strips in the eggs and then the flour
- Place oil in frying pan and heat
- Put the butter in the pan
- Add chicken to pan
- Salt and pepper to taste
- Fry chicken until a golden brown.
- Cover and turn down heat to low and cook for about 20 minutes longer.
- Peal potatoes and dice into small cubes
- Place in water and boil for around 15 minutes or until tender
- Remove from heat and drain water
- Add milk
- Lightly salt and pepper to taste
- Beat with mixer until smooth
- Place 2 cups frozen Broccoli in a bowl and place in microwave on defrost for around 10 minutes or until tender.
- In separate bowl put cheese cubes into microwave for about 3 minutes or until melted. Add the milk and stir until blended.
- Lightly salt and pepper to taste
- Pour over broccoli when serving.
- Remove chicken from frying pan
- Add ¼ cup flour and stir until smooth
- Add the milk and stir until consistency desired
- Lightly salt and pepper to taste
