Country Fried Steak Dinner

Country Fried Steak Dinner
Chicken:
- 1 lb . thin chicken strips cut to size desired
- 2 eggs
- 2 cups flour
- ½ cup butter
- ½ cup cooking oil
- salt and pepper to taste
Vegetable
- 2 cups frozen broccoli
- 1 cup Velveeta cheese with ¼ cup milk diced
Potatoes
- 6 medium potatoes
- ½ cup milk
- ½ cup butter
- salt and pepper to taste
Gravy
- ¼ cup flour
- 2 cups milk
- remaining oil from frying chicken
- salt and pepper to taste
Chicken:

Beat 2 eggs in a bowl

On a large plate put about 2 cups flour

Coat chicken strips in the eggs and then the flour

Place oil in frying pan and heat
-
Put the butter in the pan
-
Add chicken to pan
-
Salt and pepper to taste

Fry chicken until a golden brown.

Cover and turn down heat to low and cook for about 20 minutes longer.
Potatoes:
-
Peal potatoes and dice into small cubes

Place in water and boil for around 15 minutes or until tender

Remove from heat and drain water
-
Add milk
-
Lightly salt and pepper to taste

Beat with mixer until smooth
Vegetables

Place 2 cups frozen Broccoli in a bowl and place in microwave on defrost for around 10 minutes or until tender.

In separate bowl put cheese cubes into microwave for about 3 minutes or until melted. Add the milk and stir until blended.

Lightly salt and pepper to taste

Pour over broccoli when serving.
Gravy:

Remove chicken from frying pan

Add ¼ cup flour and stir until smooth
-
Add the milk and stir until consistency desired

Lightly salt and pepper to taste
