Baked Manicotti with Cheese
Ingredients
- 1 package (8 oz) manicotti pasta
- 30 oz container ricotta cheese
- 2 cups shredded Italian blend cheese or mozzarella
- ¾ cup grated parmesan cheese
- 3 Tbs chopped fresh parsley
- 2 eggs
- ½ tsp salt
- ¼ tsp ground pepper
- Cooking spray
Spaghetti Sauce
- 29 oz can tomato sauce, I use Hunts
- 12 oz can tomato paste, I use Hunts
- 1 small diced yellow onion
- 4-5 cloves minced garlic
- 2 Tbs olive oil
- 3 Tbs parsley
- 4 Tbs basil
- 1 tsp season salt
- ½ tsp pepper
Instructions
- In a medium sauce pan, add all spaghetti sauce ingredients.
- Bring to a boil.
- Cover, reduce heat and simmer while preparing the rest of the dish.
- Cook manicotti pasta according to package directions.
- Heat oven to 350º.
- Coat 13x9 baking dish with cooking spray.
- In a large bowl, stir together ricotta cheese, 1 cup Italian cheese, ½ cup parmesan cheese, parsley, eggs, salt and pepper.
- Spoon mixture into pasta.
- Arrange filled pasta in a single layer in baking dish.
- Pour sauce over pasta.
- Sprinkle 1 cup Italian cheese and ¼ cup parmesan cheese on top.
- Cover and bake 40 minutes.
- Remove cover and bake an additional 15 minutes.
